Sweet and Savory Flatbread

Ingredients

Prunes4¾ pounds
Water2 quarts
Flatbread, whole grain rich, 2 oz. eq.50 each
Chicken, diced, cooked4¾ pounds
Sweet potatoes, diced, steamed5½ pounds
Feta, crumbled(1 pound 9 ounces)1.56 pounds
Scallions, cut on bias3 cups

Instructions

  1. Soak prunes in water for 2 hours or overnight. Place in a food processor and whip until smooth and light. This will be the spread for the flatbread.
  2. Spread ⅓ cup (#12 scoop) prune spread on each 2oz. eq. whole grain rich flatbread.
  3. Layer with diced chicken (1 ½ ounce per portion) and steamed sweet potatoes (# 16 scoop).
  4. Top with crumbled feta cheese (½ ounce per portion).
  5. Bake at 350° F for 10 minutes.
  6. Garnish with scallions.

Recipe Notes

The prune spread may be frozen for future use.
