Peruvian Pork Sub

Ingredients

Pork, pulled9½ pounds

Pork Marinade

Garlic, granulated¼ cup
Salt, kosher3 tablespoons
Cumin, ground¼ cup
Paprika¼ cup
Black pepper, ground2 tablespoons
Vinegar, white1 cup
Oil, vegetable1 cup

Sandwich Assembly

Spicy Cilantro Mayo Spread9½ cups
Rolls, sub, sliced completely lengthwise50 each
Lettuce, leaf, green, washed50 each
Onion, red, thinly sliced50 each

Instructions

  1. Place the pulled pork in a sprayed 4-inch hotel pan.

Pork Marinade

  1. In a mixing bowl, whisk together all the pork marinade ingredients.
  2. Pour pork marinade over pulled pork and gently toss until all pork is coated.
  3. Cover hotel with foil and bake at 350 degrees for 35 minutes, stirring half way through baking. Ensure the pork reaches 165 degrees for 15 seconds.
  4. Hot hold pork until assembly.

Sandwich Assembly

  1. Spread 1 ½ tablespoons of the spread on each side of the sub bread.
  2. Place 3 ounces of the pulled pork on the bottom sub roll.
  3. Top with green leaf lettuce and onions, just before service.
