Ingredients
Pork, pulled | 9½ pounds |
Pork Marinade
Garlic, granulated | ¼ cup |
Salt, kosher | 3 tablespoons |
Cumin, ground | ¼ cup |
Paprika | ¼ cup |
Black pepper, ground | 2 tablespoons |
Vinegar, white | 1 cup |
Oil, vegetable | 1 cup |
Sandwich Assembly
Spicy Cilantro Mayo Spread | 9½ cups |
Rolls, sub, sliced completely lengthwise | 50 each |
Lettuce, leaf, green, washed | 50 each |
Onion, red, thinly sliced | 50 each |
Instructions
- Place the pulled pork in a sprayed 4-inch hotel pan.
Pork Marinade
- In a mixing bowl, whisk together all the pork marinade ingredients.
- Pour pork marinade over pulled pork and gently toss until all pork is coated.
- Cover hotel with foil and bake at 350 degrees for 35 minutes, stirring half way through baking. Ensure the pork reaches 165 degrees for 15 seconds.
- Hot hold pork until assembly.
Sandwich Assembly
- Spread 1 ½ tablespoons of the spread on each side of the sub bread.
- Place 3 ounces of the pulled pork on the bottom sub roll.
- Top with green leaf lettuce and onions, just before service.
