| Pork, pulled | 9½ pounds |
Pork Marinade
| Ajo granulado | ¼ taza |
| Sal kosher | 3 cucharadas |
| Comino molido | ¼ taza |
| Pimentón | ¼ taza |
| Pimienta negra molida | 2 cucharadas |
| Vinagre blanco | 1 taza |
| Aceite vegetal | 1 taza |
Montaje en sándwich
| Spicy Cilantro Mayo Spread | 9½ cups |
| Rolls, sub, sliced completely lengthwise | 50 cada uno |
| Lettuce, leaf, green, washed | 50 cada uno |
| Onion, red, thinly sliced | 50 cada uno |
Instrucciones
- Place the pulled pork in a sprayed 4-inch hotel pan.
Pork Marinade
- In a mixing bowl, whisk together all the pork marinade ingredients.
- Pour pork marinade over pulled pork and gently toss until all pork is coated.
- Cover hotel with foil and bake at 350 degrees for 35 minutes, stirring half way through baking. Ensure the pork reaches 165 degrees for 15 seconds.
- Hot hold pork until assembly.
Montaje en sándwich
- Spread 1 ½ tablespoons of the spread on each side of the sub bread.
- Place 3 ounces of the pulled pork on the bottom sub roll.
- Top with green leaf lettuce and onions, just before service.
