BBQ Rubbed Chicken

Ingredients

BBQ sauce1 gallon
BBQ rubuse BBQ seasoning in linked recipe here4 cups
Chicken40 pounds

Instructions

  1. Preheat Rational oven to roast chicken setting.
  2. Place thawed chicken on sheet pan ( make sure to separate leg and thigh from breast pieces). Use BBQ seasoning to rub the spices on each piece of chicken.
  3. Place oven probe into the thickest piece on each tray and cook to internal temperature 165°F. When chicken is done, take random temperature from several pieces from each tray to ensure a minimum temperature of 165° F is reached.
  4. Once cooked, brush 1 oz of BBQ sauce per chicken piece and continue cooking at 400°F for 8-10 minutes or until BBQ sauce is bubbling and caramelized.
