Power Energy Bites

Ingredients

Prunes3 pounds
Nut butter, creamy(peanut, sunflower, almond)1¾ pounds
Vanilla extract2 teaspoons
Oats, rolled, dry(1 pound 10 ounces)1⅝ pounds
Crispy rice cereal, whole grain(6½ cups)6 ounces
Cranberries, dried1½ pounds

Instructions

  1. Pulse prunes in a food processor until minced.
  2. Thoroughly mix vanilla, peanut butter, and prunes.
  3. Combine oats, crispy rice, and cranberries.
  4. Mix prune mixture with oat mixture with gloved hands.
  5. Form into balls with #40 disher (1.6 tablespoons per ball).
