Bison Nachos

Ingredients

Oil, olive½ cup
Bison, groundraw12 pounds
Onion, yellowraw6 cups
salt, kosher1 tablespoon
Pepper, blackground1 tablespoon
Tortilla chips, corn, whole grain-rich7½ pounds

Instructions

  1. In a large frying pan, heat olive oil over medium-high heat. Cook the onion until softened, about 4 minutes.
  2. Add bison and cook, stirring well to break up the meat until it is no longer pink, about 8 minutes. Season with salt and pepper.
  3. Place 2 ounces of tortilla chips in each boat. Top with 2.3 ounces bison meat.
