Oil, olive | ½ cup |
Bison, groundraw | 12 pounds |
Onion, yellowraw | 6 cups |
salt, kosher | 1 tablespoon |
Pepper, blackground | 1 tablespoon |
Tortilla chips, corn, whole grain-rich | 7½ pounds |
Instructions
- In a large frying pan, heat olive oil over medium-high heat. Cook the onion until softened, about 4 minutes.
- Add bison and cook, stirring well to break up the meat until it is no longer pink, about 8 minutes. Season with salt and pepper.
- Place 2 ounces of tortilla chips in each boat. Top with 2.3 ounces bison meat.
