Bruschetta is a classic Italian appetizer that is easy to make at home. Toasted bread is topped with tomatoes, Parmesan cheese, garlic, and fresh basil. Use a high-quality balsamic vinegar for best results.
Ingredients
1 Small-medium baguette
1 Onion
3 Garlic cloves
2 Cups tomatoes, chopped
1 TBS Chopped basil
1 Package Fresh Mozzarella Pearls, chopped
1 Pinch of Parmesan cheese
3 TBS Balsamic vinegar
3 TBS Extra virgin olive oil for tomato mixture
1 TBS Extra virgin olive oil for garlic mixture
Salt and pepper to taste

Instructions:
1. In a bowl, combine tomatoes, basil, mozzarella cheese, Parmesan cheese, balsamic vinegar,
olive oil, salt, and pepper. Set aside and let marinate for about 15 minutes.
2. Thinly slice onion. In a pan add about 2 tablespoons of butter and let melt. Add onions and cook on low-medium heat until onions are caramelized.
3. Cut the baguette into 1/4 inch slices. In a small bowl combine garlic and 1 tablespoon olive oil. Brush both sides of baguette slices with the garlic mixture.
4. In a large pan add olive oil then baguette slices and cook over medium heat. Gently press down on the slices to help toast them. Cook for about 3-4 minutes per side until browned.
5.Remove slices and add 1 spoon of the tomato mixture. Then sprinkle with Parmesan cheese and enjoy.
