Tahini Kofta

Ingredients

For the Ground Beef

Beef, ground, 80% lean3½ pounds
Salt2 teaspoons
Pepper, black1½ teaspoons
Turmeric, ground1½ teaspoons
Cinnamon, ground1 teaspoon
Cumin, ground1 teaspoon
Cardamom, ground1 teaspoon
Coriander, ground1 teaspoon
Parsley, finely chopped½ pound
Yogurt1 cup
Garlic, chopped1 tablespoon
Onion, red, finely chopped3 cups
Flour
optional, can replace with bread crumbs
3 tablespoons

For the Tahini Sauce

Tahini paste1½ cup
Lemon juice¾ cup
Oil, olive¼ cup
Salt1 teaspoon
Water, warm
may need additional water
3 cups

Instructions

Make the Meatballs

  1. Combine ground beef, salt, black pepper,turmeric, cinnamon, cumin, cardamom, coriander, chopped parsley, yogurt, chopped garlic, and red onion and flour into a large bowl and mix well.
  2. Portion meat mixture into balls with level firmly packed No. 16 scoop (1⁄4 cup) into the baking pan. Make sure the ground beef meatballs cover the entire pan.

Make the Tahini Sauce

  1. Pour the tahini paste, lemon juice, olive oil and salt into a bowl and mix together. Add water texture and it is creamy. Set aside for later use.

Baking Instructions

  1. Cover the baking pan with aluminum foil and create small holes to let the steam exit during cooking.
  2. Simmer the spiced ground beef in conventional oven: 350 ℉ for 15 minutes or until internal temperature is above 165 ℉. Do not overcook.
  3. Remove meatballs from the oven and spread tahini sauce mix evenly on top of the meatballs.
  4. Return to the oven uncovered and broil for 10 minutes or until the top layer has browned.
  5. Remove from the oven and let the pan cool for 5 minutes.
