Danville Chicken ‘n Noodles

Ingredients

  • Water-1⅔ gallons
  • Chicken base-½ pound
  • Onions, dehydrated flakes-⅓ cup
  • Pepper, black-1 teaspoon
  • Butter, unsalted-4 ounces
  • Chicken, shredded, cooked-6¼ pounds
  • Noodle, Kluski-2½ pounds

Instructions

  1. In a large kettle, combine water, chicken base, onions, pepper, butter, and shredded chicken to boiling.
  1. Slowly stir in noodles. Boil for 35-45 minutes. DO NOT DRAIN. Noodles will continue to thicken after cooking.

CCP: Heat to 165° F or higher for at least 15 seconds.

  1. Scoop mixture from kettle into full steamtable pans.

CCP: Hold for hot service at 135° F or higher.

  1. Portion with 8 oz ladle (1 cup).
