Chef Sam’s Chipotle Slaw

Ingredients

Cabbage, Nappa(3 quarts, ½ cup)3⅛ quarts
Cabbage, red, raw(1 quart, 2¼ cups), shredded1.563 quarts
Carrots, raw(1 quart, 2¼ cups), shredded1.563 quarts
Mayonnaise, reduced-calorie or diet, cholesterol-free(1½ cups, 1 tablespoon)1.563 cups
Dijon Mustard(¼ cup, ½ teaspoon)0.26 cup
Chipotle Chili powder(2 tablespoons, ¼ teaspoon)2.167 tablespoons
Lime juice, raw6¼ ounces

Instructions

  1. Add shredded cabbage and shredded carrots to a large bowl.

For Dressing:

  1. Mix remaining ingredients in a bowl. Toss cabbage with dressing. Serve cold.
