Ingredients
Ground turkey, raw | 9 pounds |
Peppers, jalapeno, canned, solids and liquids | 4 ounces |
Onions, raw, chopped | 2½ cups |
Peppers, sweet, red, raw, chopped | 1¼ cups |
Bread crumbs, dry, grated, plain | 2½ cups |
Egg, liquid | 2 cups |
Pepper, black, ground | 1 tablespooon |
BBQ sauce | 2 quarts |
Chili powder | 1 tablespoon |
Garlic, granulated | 1 tablespoon |
Instructions
- Prep: Preheat oven to 350° Wash and drain all fresh produce. Chop onions and bell peppers in to small dice. Chop canned jalapeno’s into small dice.
- Mix turkey, jalapeno peppers, onions, bell peppers, bread crumbs, eggs, spices, and half of the barbecue sauce together and blend well.
- Use a No. 6 scoop/disher to portion ⅔ cup scoops of meatloaf and place evenly on a lined sheet pan. (roll into a large meatball shape)
- Bake at 350°F for 15 minutes. Pour remaining barbecue sauce evenly over meatloaf.
- Continue to bake meatloaf until internal temperature reaches 165°F, about an additional 20 minutes.
- Place in warmer and hold at 135°F.

Use a #6 disher to portion these individual-sized meatloaf portions.
