Ingredients
3 boneless skinless chicken thighs
4 large Flour Tortillas
Cilantro rice
1/2 Red onion cubed
1/2 Bell pepper sliced
1 cup cheddar cheese
Shredded lettuce
Tomato
1 15 oz Can of black bean
1 15 oz Can of corn
Sauce
1/4 Cup Sour cream
1/2 Cup Mayo
1/2 Tsp Chipotle chili powder
1/2 Tsp Cumin
1/2 Tsp Cayenne pepper
1/2 Tsp Paprika
1/2 Tsp Garlic powder
1/2 Tsp Onion powder
Salt and Pepper to taste
1/3 Cup Chopped Tomato’s
Mix ingredients together.
Chicken
2 Tsp Chipotle chili powder
2 Tsp Cumin
2 Tsp Cayenne pepper
2 Tsp Paprika
2 Tsp Garlic powder
2 Tsp Onion powder
1 Tsp chipotle chili powder
Salt and Pepper
Instructions:
1. Cover chicken with avocado or canola oil and add seasonings.
2. Add avocado or canola oil to a cast iron skillet or heavy bottom pan.
3. Add chicken thighs. Cook on both sides until eternal temperature reaches 165°
4. Before chicken is done cooking, add onion and bell peppers to the pan.
5. Cook corn and beans in skillet. Season with onion powder, garlic powder, and salt. Warm tortillas in a pan.
6. Lay out tortillas and fill with sauce, chicken, rice, beans, corn, lettuce, onion, bell pepper, and cheese.
7. Fold to create your burrito. Cook in pan until desired crispiness. Enjoy.
