Prep Method: Cook, Steaming
Ingredients
- BAF Plant Protein Crumble–Bee-2 pouches
Teriyaki Sauce
- Vinegar, apple cider-½ cup
- Soy sauce, reduced sodium-2 cups
- Oil, sesame-¼ cup
- Sugar, brown-½ cup
- Ginger, ground-2 teaspoons
- Garlic, granulated-2 teaspoons
- Cornstarch-2 tablespoons
- Water-2 tablespoons
To Prepare Rice
- Rice, brown, long grain, parboiled-5½ pounds
- Water-5½ quarts
Assembly
- Broccoli florets, frozen-4 pounds
- Carrots, julienne or shredded-4 pounds
- Pineapple tidbits, canned, drained (1¼ # 10 cans)-10½ cups
- Sesame seeds, optional-¼ cup
Instructions
- Measure 2 quarts of hot water (minimum 150 °F) into a container to rehydrate Beef Crumbles. Stir in two pouches of Beef Crumbles. Mix until well-combined.
- Cover and let sit for 5 minutes.
- Add teriyaki sauce to Beef Crumbles and place in a steamtable pan. Cover and place in 350 °F oven for 30 to minutes, or until temperature reaches 135 °F.
CCP: Heat to 135 °F for at least 15 seconds.
- Hold hot for service.
CCP: Hold warm, above 135 °F for service.
To Prepare Teriyaki Sauce
- Mix vinegar, soy sauce, oil, brown sugar, ginger and garlic in a small pot over medium heat.
- In a small bowl or measuring cup combine cornstarch and water. Mix well to make a slurry.
- Add to sauce and bring to a boil. Stir until thickened
To Prepare Rice
- Combine rice and water into a steamtable pan. Stir to combine. Cover tightly.
- OVEN METHOD: Cook in a 350 °F oven for 35 to 40 minutes.
- STEAMER METHOD: Cook in a steamer for 25 to 30 minutes.
CCP: Heat to 135 °F for at least 15 seconds.
- Remove from oven or steamer and let sit for 10 to15 minutes.
To Prepare Broccoli
- Steam broccoli until just tender. Do notovercook.
Serving Instructions
To serve:
- Scoop 1 cup of rice into bowl or serving container.
- Top with ½ cup of sauced Beef Crumbles.
- Add ¼ cup of steamed broccoli, ¼ cup carrots,and ½ cup pineapple tidbits.
- Garnish with sesame seeds if desired.
