Caribbean Chicken Sub

Ingredients

Sub Roll:

Rich’s 12-inch Sub Dough12 each

Jerk Shredded Chicken:

Chicken breast, grilledmedium cube4.5 pounds
Mayonnaise4 cups
Onion, redsmall dice⅔ cup
Celerysmall dice⅔ cup
Salt, sea2 teaspoon
Pepper, black, ground½ teaspoon
Jerk sauce1½ cups
Honey6 tablespoons
Lime juice6 tablespoons
Cilantro6 tablespoon
Bell pepper, reddiced2 cups
Pineapple tidbitsdrained2 cups
Mango, freshdiced2 cups

Instructions

Sub Roll:

  1. Proof and Bake sub rolls following manufacturer’s instructions.

Jerk Shredded Chicken:

  1. Using a mixing bowl, gently blend the Chicken, Mayo, Red Onion, Celery, Salt & Pepper.
  2. Gently stir in the Jerk Sauce, Honey & Lime Juice.
  3. Fold in the Red Bell Pepper, Pineapple, Mango and Cilantro.

To assemble the Jamaican Jerk Sub:

  1. Portion 5 ounces of the Chicken-Salsa blend in each sub roll.
