Becca’s BBQ Meatloaf

Ingredients

Ground turkey, raw9 pounds
Peppers, jalapeno, canned, solids and liquids4 ounces
Onions, raw, chopped2½ cups
Peppers, sweet, red, raw, chopped1¼ cups
Bread crumbs, dry, grated, plain2½ cups
Egg, liquid2 cups
Pepper, black, ground1 tablespooon
BBQ sauce2 quarts
Chili powder1 tablespoon
Garlic, granulated1 tablespoon

Instructions

  1. Prep: Preheat oven to 350° Wash and drain all fresh produce. Chop onions and bell peppers in to small dice. Chop canned jalapeno’s into small dice. 
  2. Mix turkey, jalapeno peppers, onions, bell peppers, bread crumbs, eggs, spices, and half of the barbecue sauce together and blend well.
  3. Use a No. 6 scoop/disher to portion ⅔ cup scoops of meatloaf and place evenly on a lined sheet pan. (roll into a large meatball shape)
  4. Bake at 350°F for 15 minutes. Pour remaining barbecue sauce evenly over meatloaf.
  5. Continue to bake meatloaf until internal temperature reaches 165°F, about an additional 20 minutes.
  6. Place in warmer and hold at 135°F.

Recipe Notes

*canned green chiles can be used instead of jalapeno’s

*this recipe works well with ground beef as well

Use a #6 disher to portion these individual-sized meatloaf portions.
