Ingredients
Dressing
| Mayonnaise, Fat Free | 14 ounces |
| Lemon Juice | 10 ounces |
| Black pepper | 2 teaspoons |
| Ginger root, raw, grated | 1 tablespoon |
Salad
| Whole Kernel Sweet Corn(drained) | 18 cups |
| Edamame, blanched | 8 ¾ cups |
| Onions, chopped, raw | 2 ½ cups |
| Peppers, bell, red, diced. | 2 ½ cups |
| Cilantro leaves, raw, chopped | 1 cup |
Instructions
- Whisk together mayonnaise and lemon juice.
- Add seasonings and stir until well combined. Let stand in refrigerator overnight.
- Drain corn (thawed frozen corn may be substituted).
- Combine corn, edamame, onion, red pepper and cilantro. Mix well.
- Add dressing and mix until ingredients are well coated with dressing.
- Label and date, then store in cooler overnight.
